Chicken and Marinade

  • 4 boneless skinless chicken breasts

Instructions
 

Preparation

  • In a medium mixing bowl, combine the olive oil, lemon juice, minced garlic, parsley, thyme, salt, and pepper. Mix well to create the marinade.
  • Place the chicken breasts in a resealable plastic bag. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag and refrigerate for at least 30 minutes.

Grilling

  • Preheat your grill to medium-high heat. If using a grill pan, heat over medium-high on the stove.
  • Remove the chicken from the marinade and place it on the grill. Cook for 6-8 minutes on each side or until the internal temperature reaches 165°F.

Assembly

  • Allow the grilled chicken to rest for 5 minutes before slicing it into thin strips.
  • Divide the cooked rice or quinoa among four bowls. Top each bowl with sliced chicken, cherry tomatoes, avocado, cucumber, and feta cheese if using.
