  • 1 pound large shrimp peeled and deveined
  • 3 ears of corn husked
  • 2 cups cherry tomatoes halved
  • 1 avocado diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • Salt and pepper to taste

Preparation

  • Brush the shrimp and corn with olive oil and season with salt and pepper. Preheat the grill to medium-high heat.
  • Place the shrimp and corn on the grill. Cook shrimp for 2-3 minutes on each side until pink and cooked through. Grill corn for 10 minutes, turning occasionally, until charred.
  • In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper until well combined.
  • Once cool enough to handle, cut the kernels off the cob.
  • In a large mixing bowl, combine grilled shrimp, corn kernels, cherry tomatoes, avocado, red onion, and cilantro. Pour the dressing over the salad and toss gently to combine.

Serving

  • Transfer the salad to a serving platter or individual plates. Garnish with extra cilantro if desired.

  • Store any leftovers in an airtight container in the refrigerator for up to 2 days. For best texture and flavor, consume the salad fresh.
