Ingredients

  • 3 ears of corn husked
  • 4 medium tomatoes
  • 3 ripe peaches

Dressing

  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • Salt and pepper to taste

Preparation

  • Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.
  • Place the husked corn on the grill. Cook for 10-15 minutes, turning occasionally, until the kernels are charred and tender.
  • Add whole tomatoes to the grill. Grill for 5-7 minutes, turning once, until they start to blister and soften.
  • While the corn and tomatoes are grilling, slice the peaches into wedges, removing the pits.
  • Remove the corn and tomatoes from the grill. Allow them to cool slightly. Cut the kernels off the corn cobs and slice the tomatoes into wedges.
  • In a large mixing bowl, combine the grilled corn kernels, tomato wedges, and peach slices.

Make the Dressing

  • In a small bowl, whisk together the olive oil, lime juice, and a pinch of salt and pepper.
  • Drizzle the dressing over the salad and toss gently to combine all ingredients evenly.

Serving

  • Transfer the salad to a serving platter and garnish with fresh herbs if desired. Serve immediately for the best flavor.
