  • 4 boneless skinless chicken breasts
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup chicken broth
  • 1/2 cup light cream
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme

Preparation

  • Season both sides of the chicken breasts with salt, pepper, and a sprinkle of oregano.
  • In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and cook for about 3-4 minutes on each side, until golden brown. Remove and set aside.

Make the Sauce

  • In the same skillet, reduce the heat to medium and add garlic. Sauté until fragrant, about 30 seconds.
  • Add the sun-dried tomatoes and chicken broth to the skillet. Stir well, scraping any brown bits from the bottom of the pan.
  • Bring the mixture to a simmer and stir in the light cream. Allow it to simmer gently for 2-3 minutes to thicken slightly.

Combine and Cook

  • Return the chicken to the skillet, ensuring each piece is well-coated with the sauce. Cover and cook for an additional 10-15 minutes until the chicken is cooked through.

Serving and Storage

  • Garnish with fresh herbs if desired and serve hot with your choice of side.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.
