  • 1 pound ground beef
  • 4 cups chopped cabbage
  • 1 large onion diced
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 1 cup uncooked rice
  • 4 cups beef broth
  • 2 cups tomato sauce

Seasonings

  • 1 tsp paprika
  • 1 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions
 

Preparation

  • Chop the cabbage, dice the onion, slice the carrots, and mince the garlic to prepare your vegetables.
  • In a large pot, brown the ground beef over medium heat, breaking it apart as it cooks.
  • Add the diced onions and minced garlic, sautéing until the onions are translucent.
  • Stir in the sliced carrots and chopped cabbage, cooking until they begin to soften.
  • Pour in the tomato sauce and beef broth, then add the paprika, thyme, and bay leaves. Let it simmer for 30 minutes.
  • After simmering, add the uncooked rice and continue to cook until the rice is tender, about 20 minutes.

Serving

  • Before serving, taste and adjust seasoning with salt and pepper. Garnish with fresh parsley.

Storage

  • Allow the soup to cool before storing in airtight containers in the refrigerator for up to 4 days, or freeze for up to 3 months.
