Ingredients
  

Filling

  • 1 lb ground beef
  • 1 cup chopped onions
  • 1 cup frozen peas and carrots
  • 2 tbsp tomato paste
  • 1 cup beef broth

Potato Topping

  • 4 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp butter
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 375°F. Prepare a baking dish by lightly greasing it with butter or cooking spray.
  • In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  • Add chopped onions to the skillet and cook until they are translucent. Stir in peas, carrots, and tomato paste.
  • Pour in the beef broth and bring to a simmer. Let it cook for about 10 minutes, allowing the flavors to meld.

Assemble the Pie

  • Transfer the beef mixture to the prepared baking dish, spreading it evenly across the bottom.
  • Top the beef layer with mashed potatoes, smoothing them out with a spatula. Sprinkle with shredded cheese.
  • Place the baking dish in the oven and bake for 25 minutes, or until the cheese is melted and the top is golden brown.
  • Allow the pie to cool for a few minutes before serving. Garnish with fresh herbs if desired.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
