Ingredients
  

Salad Base

  • 4 cups heirloom tomatoes chopped
  • 1 loaf rustic bread cubed
  • 1 cucumber diced

Dressing

  • 2 tbsp red wine vinegar
  • 1 clove garlic minced
  • Salt and pepper to taste

Preparation

  • Cut the rustic bread into bite-sized cubes. Drizzle with olive oil and season with salt and pepper. Spread on a baking sheet and toast in a preheated oven at 375°F for 10 minutes until golden and crisp.
  • Chop the heirloom tomatoes into large chunks. Dice the cucumber and slice the red onion thinly. Combine all in a large mixing bowl.
  • In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, and a pinch of salt and pepper until well combined.
  • Add the toasted bread cubes to the mixing bowl with the vegetables. Pour over the dressing and toss to coat all ingredients evenly.
  • Gently fold in fresh basil leaves and capers. Let the salad rest for 30 minutes to allow the flavors to meld.
