  • 1 cup protein powder vanilla or unflavored
  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon

Wet Ingredients

  • 2 large eggs
  • 1/2 cup Greek yogurt
  • 1/3 cup honey or maple syrup
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract

Additional Ingredients

  • 1 cup grated zucchini
  • 1/2 cup chopped nuts optional
  • 1/2 cup dark chocolate chips optional

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large mixing bowl, combine the protein powder, all-purpose flour, almond flour, baking powder, baking soda, salt, and cinnamon.
  • In another bowl, whisk together the eggs, Greek yogurt, honey or maple syrup, vegetable oil, and vanilla extract until smooth.
  • Gently fold the wet ingredients into the dry ingredients until just combined. Add the grated zucchini and any optional add-ins, folding just until incorporated.
  • Divide the batter evenly among the muffin cups, filling each about 3/4 full.

Serving

  • Bake in the preheated oven for 18 to 22 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

  • Store muffins in an airtight container at room temperature for up to 3 days or freeze for up to a month.
