Preparation

  • Wash the zucchini thoroughly. Using a spiralizer, create long noodle-like strands. If you don't have a spiralizer, use a vegetable peeler to create wide ribbons.
  • Place the spiralized zucchini on a paper towel and gently pat dry to remove excess moisture.

Cooking

  • Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  • Add the cherry tomatoes to the skillet and cook for 3-4 minutes until they start to soften and release their juices.
  • Increase the heat to medium-high and add the zucchini noodles. Toss gently with tomatoes and garlic, cooking for 2-3 minutes until noodles are slightly tender but still firm.

Finishing Touches

  • Remove the skillet from heat. Sprinkle with freshly grated Parmesan and toss to ensure the cheese melts and is evenly distributed. Add chopped basil.
  • Season with salt and pepper to taste. Optionally, add red pepper flakes for a spicy kick.

Serving

  • Serve immediately, garnished with additional Parmesan and fresh basil if desired. Pair with grilled chicken or shrimp for added protein.
