Blackberry Filling

  • 2 tbsp cornstarch

Instructions
 

Preparation

  • In a large mixing bowl, combine flour, sugar, baking powder, and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  • In a separate bowl, gently toss blackberries with sugar, lemon juice, and cornstarch until evenly coated. Let sit for 5 minutes to allow flavors to meld.
  • Preheat your oven to 375°F. Press half of the crumb mixture into the bottom of a greased 9-inch round cake pan. Spread the blackberry filling evenly over the crust. Sprinkle remaining crumb mixture on top.
  • Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the filling is bubbly. Remove from the oven and cool completely before slicing.
