  • 1 1/2 pounds boneless skinless chicken breasts
  • 3 tablespoons fajita seasoning
  • 2 tablespoons olive oil
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 onion sliced
  • 8 flour tortillas
  • Salt and pepper to taste

Preparation

  • Cut the chicken breasts into thin strips. In a mixing bowl, combine chicken with fajita seasoning, olive oil, salt, and pepper. Mix well to coat the chicken evenly. Let it marinate for at least 15 minutes.
  • Slice the red and green bell peppers, along with the onion. Set them aside for cooking.

Cooking

  • Heat a large skillet over medium-high heat. Add a tablespoon of olive oil, then sauté the sliced bell peppers and onion until tender and slightly charred, about 5-7 minutes. Remove from skillet and set aside.
  • In the same skillet, add the marinated chicken strips. Cook until the chicken is cooked through and no longer pink, approximately 8-10 minutes.
  • Return the cooked vegetables to the skillet with the chicken. Stir to combine and heat through.

Assembly

  • Warm the flour tortillas in a separate pan or microwave until soft and pliable.
  • Fill each tortilla with the chicken and vegetable mixture. Top with your choice of optional toppings like shredded cheese, guacamole, and sour cream.

Serving

  • Serve immediately with lime wedges on the side for squeezing over the tacos.
