  • 2 tbsp olive oil
  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 3 cloves garlic minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup fresh tomatoes diced
  • 1/2 cup fresh basil leaves chopped

Preparation

  • Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear until golden on both sides. Remove from the skillet and set aside.
  • In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant.
  • Add the rice to the skillet and stir to coat with the garlic and oil. Pour in the chicken broth and bring to a simmer.
  • Nestle the chicken breasts back into the skillet. Scatter the diced tomatoes and chopped basil over the top. Cover and reduce the heat to low.
  • Let the dish simmer for 20-25 minutes, or until the rice is tender and the chicken is cooked through.
  • Remove from heat and let the dish rest for 5 minutes to allow the flavors to meld.
  • Serve hot, garnished with additional fresh basil if desired.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
