Ingredients
  

Crust

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1 cup unsalted butter cold and cut into cubes

Filling

  • 4 large eggs
  • 1 1/2 cups sugar
  • 1/3 cup all-purpose flour
  • 1/2 cup fresh lemon juice
  • 2 tbsp lemon zest
  • 2 cups fresh blueberries

  • Preheat the oven to 350°F (175°C). Line a 9x13-inch baking dish with parchment paper. In a large bowl, mix the flour, sugar, and salt. Add the cold butter and use a pastry cutter to combine until the mixture resembles coarse crumbs. Press the mixture firmly into the bottom of the prepared dish and bake for 20 minutes until golden.
  • In another bowl, whisk together the eggs, sugar, flour, lemon juice, and lemon zest until smooth. Gently fold in the blueberries, ensuring they're evenly distributed throughout the mixture.
  • Pour the filling over the baked crust and spread evenly. Return the dish to the oven and bake for 30-35 minutes, or until the filling is set and the edges are lightly browned.
  • Allow the bars to cool completely in the pan on a wire rack. This process will take about 60 minutes and is crucial for the bars to set properly.
