Preparation

  • Rinse the shrimp under cold water and pat dry with a paper towel. Season with salt, pepper, and a bit of lemon zest. Set aside.
  • In a large pot, bring salted water to a boil. Add pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

Combining Ingredients

  • Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes per side.
  • Stir in lemon juice and zest, ensuring shrimp are well coated.
  • Add cooked pasta and reserved pasta water to the skillet. Toss to combine, adding more pasta water if needed.
  • Finish with fresh parsley and, if using, add red pepper flakes, Parmesan cheese, cherry tomatoes, and spinach or arugula.

Serving

  • Divide the pasta among bowls and serve immediately, garnished with extra parsley or lemon slices if desired.
