Ingredients
  

Lentil Base

  • 1 cup dried lentils
  • 2 cups water
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Salad Ingredients

  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes halved
  • 1 avocado diced
  • 1/2 cup corn kernels
  • 1/4 cup sliced red onion
  • 1/4 cup chopped fresh cilantro

Instructions
 

Preparation

  • Rinse lentils under cold water. In a medium saucepan, combine lentils and water. Bring to a boil, reduce heat to a simmer, and cook for 20-25 minutes until tender. Drain excess water and set lentils aside.
  • In a large mixing bowl, combine the cooked lentils with olive oil, cumin, chili powder, garlic powder, onion powder, salt, and pepper. Mix well to ensure the lentils are evenly coated with the spices.

Serving

  • Divide the romaine lettuce among four bowls. Top each with a scoop of seasoned lentils. Add cherry tomatoes, avocado, corn, red onion, and cilantro. Serve immediately with your choice of toppings.

Storage

  • Store any leftover lentils and salad components separately in airtight containers in the refrigerator for up to 3 days. Reassemble bowls with fresh ingredients when ready to serve.
