Ingredients
  

Marinade

  • 1/4 cup olive oil
  • 3 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Kabobs

  • 2 lbs boneless chicken breasts cubed
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 red onion chopped
  • 1 cup cherry tomatoes
  • 1 cup feta cheese cubed

Instructions
 

Preparation

  • In a mixing bowl, combine olive oil, lemon juice, minced garlic, oregano, and thyme. Whisk together until well mixed. Add salt and pepper to taste.
  • Place the cubed chicken in the bowl with the marinade. Stir to coat evenly. Cover and refrigerate for at least 30 minutes or up to 2 hours.

Assembling the Kabobs

  • Thread chicken, bell peppers, onion, and cherry tomatoes onto skewers. Alternate between ingredients for even cooking.

Grilling

  • Heat your grill to medium-high. Ensure the grates are clean and lightly oiled.
  • Place the skewers on the grill. Cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and has grill marks.
