  • 4 boneless skinless chicken breasts
  • 2 ripe mangoes peeled and chopped
  • 2 tbsp olive oil
  • 1/4 cup soy sauce
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 1 tbsp lime juice
  • Salt and pepper to taste

Preparation

  • Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
  • Add chicken to the skillet and cook until golden brown on both sides, about 5 minutes per side. Remove from skillet and set aside.

Mango Sauce

  • In the same skillet, add garlic and ginger, cooking until fragrant. Stir in chopped mango, lime juice, and soy sauce. Simmer until the sauce thickens slightly.
  • Return chicken to the skillet, spooning mango sauce over the top. Cover and cook for another 10 minutes, or until the chicken is cooked through.

Serving

  • Transfer chicken to a serving platter, pour remaining sauce over the top, and garnish with cilantro if desired.

  • Allow leftovers to cool completely, then store in an airtight container in the refrigerator for up to 3 days.
