Ingredients
  

Chicken

  • 2 boneless skinless chicken breasts

Street Corn

  • 2 ears of corn grilled and kernels removed
  • 2 tbsp mayonnaise
  • 1 tbsp lime juice
  • 1/4 cup cotija cheese crumbled
  • 1/4 cup cilantro chopped
  • Paprika for garnish

Rice

  • 1 cup long grain white rice
  • 2 cups water or chicken broth

Instructions
 

Preparation

  • Combine lime juice, olive oil, chili powder, cumin, garlic powder, and salt in a mixing bowl. Add chicken breasts, ensuring they are fully coated. Marinate for at least 30 minutes.
  • Preheat grill to medium heat. Cook chicken breasts for 6-7 minutes on each side until cooked through. Let rest before slicing.
  • In a rice cooker or pot, combine rice and water (or chicken broth). Cook until rice is tender and water is absorbed. Fluff with a fork.
  • In a bowl, mix grilled corn kernels, mayonnaise, lime juice, cotija cheese, and cilantro. Stir until well combined and set aside.

Serving

  • In each bowl, place a scoop of rice, top with sliced chicken, and add a generous portion of street corn. Garnish with additional cilantro and a sprinkle of paprika.
