Equipment

  • 1 mixing bowl large
  • 1 electric mixer optional, for whipping cream
  • 8 small jars for assembly

Ingredients

Crust

  • 1 cup graham cracker crumbs
  • 1/4 cup unsalted butter melted
  • 2 tbsp sugar

Cheesecake Filling

  • 8 oz cream cheese softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 cup heavy cream

Topping

  • 1 1/2 cups mixed berries
  • 1 tbsp sugar optional

Instructions

Preparation

  • Combine graham cracker crumbs, melted butter, and sugar in a bowl. Mix until the crumbs are evenly coated and the mixture resembles wet sand.
  • Distribute the crumb mixture evenly into the bottom of each jar, pressing down to form a firm base.

Make the Cheesecake Filling

  • In a mixing bowl, beat the softened cream cheese until smooth and creamy.
  • Gradually mix in the sugar and vanilla extract until fully incorporated.
  • In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.

Assemble the Jars

  • Spoon the cheesecake filling over the crust layer in each jar, smoothing the top.
  • Top the filling with a layer of mixed berries. If desired, sprinkle with a little sugar for added sweetness.
  • Refrigerate the assembled jars for at least 2 hours before serving to allow the flavors to meld and the filling to firm up.

Serving and Storage

  • Serve the cheesecake jars chilled. They are perfect as individual servings for parties and picnics.
  • Keep any leftover jars covered in the refrigerator for up to three days. Enjoy them as a quick and satisfying treat.
