Peach Layer

Preparation

  • Preheat your oven to 350°F (175°C). In a large mixing bowl, combine flour, sugar, baking powder, and salt. Add melted butter, milk, and vanilla extract, stirring until just combined. Pour the batter into a greased 9-inch round cake pan and bake for 10-12 minutes or until a toothpick inserted into the center comes out clean.
  • In a separate bowl, toss the peach slices with sugar and lemon juice. Let them sit for about 10 minutes to allow the flavors to meld and the juices to release.
  • Using an electric mixer, beat the heavy cream on medium-high speed until soft peaks form. Add powdered sugar and vanilla extract, and continue to beat until stiff peaks form.

Serving

  • In each dessert cup, place a layer of crumbled shortcake followed by a layer of peach slices. Repeat the layers, finishing with a generous dollop of whipped cream on top.
  • Serve immediately or chill for 30 minutes for a refreshing dessert. Garnish with a mint leaf if desired.
