  • Preheat the oven to 375°F. In a large saucepan, combine cherries, sugar, cornstarch, and vanilla extract. Cook over medium heat, stirring frequently, until the mixture thickens and begins to bubble. Pour the filling into a greased 9-inch baking dish.
  • In a medium bowl, whisk together flour, sugar, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in milk just until combined. Drop spoonfuls of the dough over the cherry filling.
  • Place the cobbler in the oven and bake for 45-50 minutes, or until the topping is golden brown and the filling is bubbling. Allow to cool for 15 minutes before serving.
