Ingredients
  

Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup granulated sugar
  • 6 tbsp unsalted butter melted

Filling

  • 14 oz sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract

Preparation

  • In a large mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are well coated with butter. Press the mixture evenly into the bottom and sides of a 9-inch pie dish. Chill in the refrigerator while you prepare the filling.
  • In another mixing bowl, whisk together the sweetened condensed milk, fresh lemon juice, lemon zest, and vanilla extract until smooth and well combined. The mixture should thicken slightly as you whisk.
  • Pour the lemon filling into the prepared crust, spreading it evenly with a spatula. Ensure the filling is smooth on top.
  • Cover the pie with plastic wrap and refrigerate for at least 4 hours, or overnight, until the filling is firm and set.

Serving

  • Once chilled, slice the pie into 8 equal pieces. Serve cold, optionally garnished with whipped cream or fresh lemon slices.

Storage

  • Cover any leftover pie with plastic wrap and store in the refrigerator for up to 3 days. For longer storage, freeze individual slices wrapped in plastic wrap and foil.
