  • 2 boneless skinless chicken breasts
  • 3 cloves garlic minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Chopped parsley for garnish

Preparation

  • Season chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken until golden brown on both sides. Remove from skillet and set aside.
  • In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
  • Add chicken broth to the skillet and bring to a simmer. Stir in rice, then nestle the chicken breasts into the rice.
  • Cover and let cook for 20-25 minutes, until rice is tender and chicken is cooked through.
  • Uncover skillet, stir in heavy cream and Parmesan cheese until melted and creamy.

Serving

  • Garnish with chopped parsley before serving hot.
