Cake

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter softened
  • 1 1/2 cups granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup whole milk

Decoration

  • 1 cup blueberries
  • 2 cups strawberries sliced
  • 1 cup raspberries
  • 2 cups whipped cream or vanilla frosting

Preparation

  • Preheat your oven to 350°F (175°C). Grease a large sheet pan with butter or non-stick spray.
  • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  • In a large mixing bowl, use an electric mixer to beat the butter and sugar until light and fluffy. This should take about 2-3 minutes.
  • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, alternating with the milk. Begin and end with the flour mixture, mixing just until combined.
  • Spread the cake batter evenly into the prepared sheet pan, smoothing the top with a spatula.
  • Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  • Allow the cake to cool completely in the pan on a wire rack before decorating.
  • Once cooled, spread a layer of whipped cream or frosting over the top. Arrange blueberries in the top left corner, and use strawberries and raspberries to create red stripes, leaving gaps for white stripes of frosting.
  • Slice into squares and serve chilled or at room temperature. Enjoy your festive creation!
