Ingredients
  

Salad Ingredients

  • 4 ripe peaches sliced
  • 16 oz fresh mozzarella sliced
  • 1 cup fresh basil leaves

Dressing

  • 2 tbsp extra virgin olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp freshly ground black pepper

Instructions
 

Preparation

  • Wash the peaches under cold water. Slice them in half, remove the pit, and cut into thin wedges.
  • Slice the fresh mozzarella into even rounds. Set aside on a plate.
  • On a large platter, alternate slices of peach and mozzarella. Scatter fresh basil leaves over the top.
  • Drizzle extra virgin olive oil over the assembled salad. Sprinkle with sea salt and freshly ground black pepper.
  • Serve the salad immediately for best flavor and texture. Enjoy as a side dish or a light main course.
  • If there are leftovers, store in an airtight container in the refrigerator for up to 2 days.
