Ingredients
  

Crumb Mixture

  • 3 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsalted butter cold and diced
  • 1 large egg

Peach Filling

  • 5 cups fresh peaches peeled and sliced
  • 1/2 cup granulated sugar
  • 2 tbsp cornstarch
  • 1 tbsp lemon juice

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with butter or non-stick spray.
  • In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Add the cold, diced butter and use a pastry cutter or fingers to combine until the mixture resembles coarse crumbs. Stir in the egg until just combined.
  • Press about 2/3 of the crumb mixture into the bottom of the prepared baking dish to form an even crust.
  • In another bowl, toss the sliced peaches with sugar, cornstarch, and lemon juice. Mix until the peaches are evenly coated.
  • Spread the peach mixture evenly over the crust in the baking dish.
  • Sprinkle the reserved crumb mixture over the peach filling, covering it evenly.
  • Bake in the preheated oven for 35-40 minutes, or until the topping is golden brown and the peach filling is bubbling.
  • Allow the bars to cool completely in the pan on a wire rack. This will help the filling set and make slicing easier.
  • Cut into bars and serve. Store any leftovers in an airtight container at room temperature for up to 2 days or refrigerate for longer storage.
