Shortcake Base

  • 2 cups all-purpose flour

  • 3/4 cup whole milk
  • 1 tsp vanilla extract

Peach Filling

  • 4 fresh peaches peeled and sliced
  • 2 tbsp sugar
  • 1 tbsp lemon juice

Whipped Cream Topping

  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Preparation

  • Preheat your oven to 350°F. Grease the muffin tin with butter or non-stick spray to ensure the shortcakes do not stick.
  • In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Stir to evenly distribute the ingredients.
  • Add the chilled, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.
  • In a separate bowl, mix the whole milk and vanilla extract. Gradually add this to the dry mixture, stirring gently until just combined. Do not overmix.
  • Spoon the shortcake batter into the prepared muffin tin, filling each cup about two-thirds full. Smooth the tops if necessary.
  • Place the muffin tin in the preheated oven and bake for 18-20 minutes or until the tops are lightly golden and a toothpick inserted into the center comes out clean.
  • While shortcakes bake, toss sliced peaches with sugar and lemon juice in a bowl. Allow them to macerate for about 15 minutes to release their juices.
  • In a chilled mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until soft peaks form. Be cautious not to overwhip.
  • Once shortcakes are cooled, cut each in half horizontally. Layer the bottom half in a serving cup, add a spoonful of peaches, and top with whipped cream. Place the top half of the shortcake and add more peaches and cream.
  • Serve immediately, garnishing with additional peach slices or mint leaves for a fresh touch. Enjoy the delightful blend of flavors and textures.
