Peach Filling

  • 1/2 cup unsalted butter cubed
  • 1 tsp ground cinnamon
  • 1/4 cup chopped pecans optional

Preparation

  • Preheat the oven to 350°F. In a large mixing bowl, combine flour, sugar, and melted butter. Mix until crumbly. Press the mixture into a lightly greased 9x13 inch baking pan to form the crust.
  • In another bowl, combine sliced peaches, sugar, cornstarch, and lemon juice. Stir until the peaches are well coated and the cornstarch has dissolved.
  • In a separate bowl, mix flour, brown sugar, and cinnamon. Cut in the cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Add pecans if using.
  • Spread the peach filling evenly over the crust. Sprinkle the crumb topping evenly over the peaches.
  • Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the peaches are bubbly.

Serving

  • Allow the bars to cool completely in the pan before cutting into squares. Serve warm or at room temperature, optionally with vanilla ice cream.
