Ingredients
  

Collard Greens

  • 2 lbs collard greens washed and chopped
  • 1/4 lb smoked bacon chopped
  • 1 onion diced

Macaroni and Cheese

  • 2 cups elbow macaroni
  • 2 cups sharp cheddar cheese shredded
  • 1 1/2 cups milk

Sweet Potato Fries

  • 2 large sweet potatoes cut into fries
  • 2 tbsp olive oil

Instructions
 

Collard Greens

  • In a large pot, cook the bacon until crispy. Remove and set aside, leaving the drippings in the pot. Add onions and cook until translucent, about 5 minutes.
  • Add collard greens to the pot, cover with water, and simmer for 45 minutes until tender. Season with salt and pepper.

Macaroni and Cheese

  • Boil macaroni according to package instructions. Drain and set aside.
  • In a saucepan, heat milk and cheese over medium heat, stirring until smooth. Combine with pasta and bake at 350°F for 20 minutes.

Sweet Potato Fries

  • Preheat oven to 425°F. Toss sweet potatoes with olive oil and cinnamon. Spread on a baking sheet in a single layer.
