Ingredients
  

Chicken and Seasoning

  • 2 pounds boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Taco Assembly

  • 8 corn or flour tortillas
  • 1/2 cup chopped fresh cilantro
  • 1 cup diced onion
  • 1 cup salsa
  • 1 avocado sliced

Instructions
 

Preparation

  • Rub the chicken breasts with olive oil, then season generously with cumin, paprika, garlic powder, salt, and pepper.
  • Place the seasoned chicken breasts in the slow cooker, making sure they are spread out evenly.

Cooking

  • Set the slow cooker to low and cook the chicken for 6-7 hours, or 3-4 hours on high, until the chicken is tender and easy to shred.
  • Once cooked, remove the chicken from the slow cooker and use two forks to shred it. Return the shredded chicken to the cooker to soak up remaining juices.

Assembly

  • While the chicken is cooking, prepare your toppings such as chopped cilantro, diced onion, sliced avocado, and salsa.
  • Warm the tortillas on a skillet over medium heat for about 30 seconds on each side.
  • Place a portion of shredded chicken onto each tortilla, then top with cilantro, onion, salsa, and avocado slices.

  • Serve the assembled tacos immediately while warm, accompanied by your favorite sides.
  • Store leftover chicken in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
