Preparation

  • Bring 1 cup of water to a boil in a medium saucepan. Add 1 cup of instant rice, remove from heat, cover, and let it sit for 5 minutes. Fluff with a fork and set aside.
  • In the same saucepan, combine the cooked rice, 2 cups of whole milk, 1/2 cup sugar, and 1/4 teaspoon salt. Cook over medium heat, stirring frequently, until the mixture thickens, about 15 minutes.
  • Reduce heat to low and continue to cook for another 10 minutes, stirring occasionally, until desired consistency is reached.
  • Remove from heat and stir in 1 teaspoon vanilla extract and 1/2 teaspoon ground cinnamon. Stir in optional add-ins if using.

Serving

  • Spoon the pudding into bowls. Serve warm for a comforting dessert or chill for at least 30 minutes for a refreshing treat. Garnish with fresh fruit or a sprinkle of cinnamon if desired.
