Cream Layer

  • 1 cup heavy cream
  • 1 cup mascarpone cheese
  • 1/2 cup powdered sugar

Berry Layer

  • 1 cup strawberries sliced
  • 1 cup blueberries
  • 1 cup raspberries

Preparation

  • Preheat your oven to 350°F. Grease and flour a 9-inch round cake pan to prevent sticking.
  • In a large mixing bowl, sift together the flour, baking powder, baking soda, cocoa powder, and salt. Set aside.
  • In another bowl, cream the butter and sugar using an electric mixer until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the buttermilk, red food coloring, vanilla extract, and vinegar.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined and smooth.
  • Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely before cutting into cubes.

Assembling the Trifle

  • In a bowl, whip the heavy cream, mascarpone cheese, and powdered sugar together until soft peaks form. Set aside.
