Equipment

  • 1 large pot
  • 1 immersion blender
  • 1 wooden spoon

Ingredients

Main Ingredients

  • 4 large russet potatoes peeled and diced
  • 1 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 cup milk
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 pound turkey bacon cooked and crumbled
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

Preparation

  • Peel and dice the potatoes into small, even pieces. Rinse under cold water to remove excess starch.
  • In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent.
  • Add the diced potatoes to the pot, stirring to coat. Pour in the chicken broth and bring to a boil. Reduce to a simmer and cook until potatoes are tender, about 20 minutes.
  • Use an immersion blender to puree the soup until smooth. Stir in milk, heavy cream, and shredded cheddar cheese, cooking over low heat until cheese is melted.
  • Add crumbled turkey bacon and sour cream. Season with salt and pepper to taste. Stir until well combined.

Serving

  • Ladle the soup into bowls. Garnish with chopped green onions and additional cheese if desired. Serve hot with crusty bread or a side salad.

Storage

  • Allow the soup to cool completely before transferring to an airtight container. Store in the refrigerator for up to 3 days or freeze for up to 3 months.
