  • Preheat your oven to 425°F (220°C). Prepare a sheet pan by lining it with parchment paper for easy cleanup.
  • In a separate bowl, toss the broccoli florets, sliced red bell pepper, and baby carrots with olive oil, salt, and pepper. Arrange the vegetables evenly on the prepared sheet pan.
  • Place the sheet pan with vegetables in the preheated oven and roast for 10 minutes to give them a head start before adding the chicken.
  • Remove the sheet pan from the oven and arrange the marinated chicken thighs among the partially roasted vegetables. Pour any remaining marinade over the chicken for added flavor.
