Preparation

  • Preheat your oven to 350°F (175°C) to get it ready for baking the crisp.
  • In a large mixing bowl, combine the blueberries and sliced peaches. Add the granulated sugar and lemon juice, tossing gently to coat the fruit.
  • In another bowl, mix the flour, oats, brown sugar, and salt. Add the cold, diced butter and use a pastry cutter to blend until the mixture forms coarse crumbs.
  • Transfer the fruit mixture to a greased 9-inch round cake pan. Evenly distribute the crisp topping over the fruit mixture.
  • Place the assembled crisp in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and the fruit is bubbling.
  • Remove the crisp from the oven and allow it to cool for at least 10 minutes before serving. This helps the fruit juices to thicken.
