Ingredients

Chicken Marinade

  • 4 boneless skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 2 limes
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 1 tsp ground cumin

  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh cilantro chopped
  • 1 jalapeño seeded and minced
  • Juice of 1 lime

Instructions

Preparation

  • In a large mixing bowl, combine olive oil, lime juice, garlic, smoked paprika, ground cumin, salt, and pepper. Add chicken breasts and coat them well. Cover and refrigerate for at least 30 minutes.
  • Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.

Make the Peach Salsa

  • In a medium bowl, mix together diced peaches, red onion, cilantro, jalapeño, and lime juice. Season with salt to taste and set aside to allow flavors to meld.

Grill the Chicken

  • Remove chicken from marinade and place on the grill. Cook for 6-7 minutes per side until fully cooked and grill marks appear. Ensure internal temperature reaches 165°F.

Serve

  • Transfer grilled chicken to a serving platter. Top with the prepared peach salsa before serving.

Storage

  • Store any leftover chicken and salsa separately in airtight containers in the refrigerator for up to 3 days.
