  • 1 whisk

Ingredients

Salad Ingredients

  • 12 oz spaghetti
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup black olives sliced
  • 1/2 cup red onion thinly sliced
  • 1 cup feta cheese crumbled

Tangy Dressing

  • 3 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 2 cloves garlic minced
  • Salt and pepper to taste

Instructions

Preparation

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, about 8-10 minutes. Drain and rinse under cold water to cool.
  • In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, oregano, salt, and pepper. Mix until well combined.

Assembly

  • In a large mixing bowl, combine the cooled spaghetti, cherry tomatoes, cucumber, black olives, red onion, and feta cheese. Toss gently to combine.
  • Pour the dressing over the salad ingredients and toss until everything is evenly coated.
  • Cover the bowl and refrigerate the salad for at least one hour to allow flavors to meld.

Serving and Storage

  • Before serving, toss the salad again to redistribute the dressing. Adjust seasoning if necessary and garnish with fresh herbs if desired.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Toss before serving again to refresh the flavors.

Notes

Pro Tips: Use fresh herbs for added flavor, and let the salad chill for the best taste. Ingredient Substitutions: Try mozzarella instead of feta or add grilled chicken for extra protein. How to Serve: Serve cold, garnished with fresh herbs. Storage & Freshness: Best enjoyed within 3 days. Make-Ahead Tips: Prepare the dressing in advance and store it separately until ready to toss with the salad.
