  • 1 cup buttermilk

Strawberry Filling

  • 2 cups fresh strawberries sliced
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice

Whipped Cream

  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy. This should take about 3 minutes with an electric mixer.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Mix until just combined.
  • Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • While the cakes bake, mix the sliced strawberries with sugar and lemon juice. Let them sit for about 15 minutes to release their juices.
  • Chill a mixing bowl and beaters. Whip the cream and powdered sugar together until soft peaks form.
  • Place one cake layer on a serving plate. Spread a layer of whipped cream, then a layer of strawberries. Top with the second cake layer and repeat.
