  • 1 red bell pepper diced

Dressing

Preparation

  • Preheat your grill to medium-high heat. Place the corn directly on the grill grates and cook for about 10 minutes, turning occasionally, until the corn is charred and cooked through.
  • Allow the grilled corn to cool slightly. Stand each cob upright on a cutting board and carefully slice downwards to remove the kernels. Transfer the kernels to a large mixing bowl.
  • Dice the red bell pepper, red onion, and avocados. Chop the fresh cilantro. Add all of these ingredients to the mixing bowl with the corn.

Make the Dressing

  • In a small bowl, whisk together the lime juice, olive oil, chili powder, cumin, salt, and pepper. Adjust the seasoning to taste.

Assemble the Salad

  • Pour the dressing over the salad ingredients in the mixing bowl. Toss gently to combine, ensuring all ingredients are evenly coated with the dressing.
