  • 8 oz rotini pasta
  • 1 cup cherry tomatoes halved
  • 1 cup mozzarella balls

  • 1/4 cup fresh basil leaves torn

Dressing

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 clove garlic minced
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Preparation

  • Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool.
  • In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, Dijon mustard, salt, and pepper until well combined.

Assembly

  • In a large mixing bowl, combine the cooked pasta, cherry tomatoes, mozzarella balls, black olives, and red onion.
