Ingredients
  

Pasta

  • 8 oz pasta of choice
  • 1 tbsp olive oil

Chicken

  • 2 chicken breasts sliced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lemon zest

Sauce

  • 2 cloves garlic minced
  • 1/4 cup lemon juice
  • 1/2 cup reserved pasta water
  • 1/4 cup parmesan cheese grated
  • 1/4 cup fresh parsley chopped

Instructions
 

Preparation

  • Season chicken with salt, pepper, and lemon zest. Allow to marinate for at least 15 minutes.
  • Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water and drain the rest.

Cooking

  • In a skillet, heat olive oil over medium heat. Cook chicken until golden and cooked through. Remove and set aside.
  • In the same skillet, add garlic and cook until fragrant. Add lemon juice and reserved pasta water.
  • Return chicken to skillet, add cooked pasta, and toss everything together with parmesan and parsley.

Serving

  • Plate the pasta, ensuring an even distribution of chicken and sauce. Garnish with extra parsley and parmesan.

  • Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently on the stove or microwave with a splash of water.
