Preparation

  • In a mixing bowl, combine fresh lime juice, honey, soy sauce, and minced garlic. Stir until well combined.
  • Place the chicken pieces in the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight for best results.
  • While the chicken marinates, soak wooden skewers in water for at least 30 minutes to prevent burning during grilling.
  • Thread the marinated chicken onto the skewers, alternating with pineapple chunks and bell pepper pieces if using. Leave a little space between each piece for even cooking.
