  • 1 mixing bowl large
  • 1 whisk
  • 1 colander for draining potatoes

Ingredients

Main Ingredients

  • 2 pounds waxy potatoes such as red or Yukon Gold
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh dill chopped
  • 2 tablespoons fresh chives chopped
  • 2 cloves garlic minced

Dressing

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

Preparation

  • Wash and cut the potatoes into bite-sized pieces. Place them in a large pot and cover with cold water. Add a pinch of salt.
  • Bring the pot to a boil over medium-high heat. Reduce heat to a simmer and cook until potatoes are fork-tender, about 15-20 minutes.
  • Drain the cooked potatoes in a colander and let them cool slightly.

Make the Dressing

  • In a mixing bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until well combined.

Assemble the Salad

  • In a large bowl, combine the warm potatoes, fresh herbs, and minced garlic. Drizzle with the dressing.
  • Gently toss the salad to ensure the dressing coats all the ingredients evenly. Adjust seasoning if necessary.

Serving

  • Serve the warm potato salad immediately, garnished with additional herbs if desired.

Storage

  • Store any leftover salad in an airtight container in the refrigerator for up to 3-4 days.
