Ingredients
  

Salad

  • 2 medium zucchinis shaved into ribbons
  • 1 cup cherry tomatoes halved
  • 1/4 cup fresh basil leaves chopped
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup fresh parsley chopped

Dressing

  • 1/4 cup olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp honey
  • Salt and freshly cracked black pepper to taste

Preparation

  • Wash and dry the zucchinis and cherry tomatoes thoroughly. Using a vegetable peeler, shave the zucchinis into thin ribbons. Halve the cherry tomatoes for a burst of color and flavor.
  • Finely chop the fresh basil, mint, and parsley. These herbs will add a fragrant and flavorful touch to your salad.

Mixing the Salad

  • In a large mixing bowl, add the zucchini ribbons, cherry tomatoes, and chopped herbs. Toss them gently to combine and distribute the ingredients evenly.

Making the Dressing

  • In a small bowl, whisk together the olive oil, fresh lemon juice, and honey. Season with salt and freshly cracked black pepper to taste.
  • Pour the dressing over the salad ingredients in the mixing bowl. Toss gently to ensure all the zucchini ribbons and other ingredients are coated with the dressing.

Serving
